The Sanford salmon stands out with its noticeably lighter color, while the Mount Cook variety is darker, almost reminiscent of rainbow trout. The flavor of the Mount Cook isn’t as robust, but the overall texture is quite chewy, which adds a unique dimension to the eating experience.

I opted for the midsection near the head, and I must say, the fat layer is absolutely divine. It imparts a sweet, rich taste that permeates every bite. Because it’s the midsection, it remains satisfying no matter how you prepare or eat it, never getting tiring.

While the price might be a bit higher, the ability to choose the specific part ensures a much more enjoyable and hassle-free experience.
